Gold trades globally in US dollars per troy ounce. To show the price in EUR, we convert at the live exchange rate and divide by 31.1035 grams, then adjust for karat purity. That is why the local price moves with both the gold market and the EUR exchange rate.

How a Spanish quote is built
Spanish jewellery is priced per gram of 18K (oro de ley, 750) plus workmanship, with 21% IVA on jewellery and none on investment gold. Bars and coins from Spanish and international refiners are sold by banks and dealers at a premium over the euro spot price.
Selling gold in Spain
Compro oro shops buy at melt value less a margin and the sale is subject to a transfer tax paid by the buyer in many regions. Gains on gold are taxed as savings income on a sliding scale from 19% to 30% depending on the amount, and documented purchase cost is needed to compute the gain.
